Roasted red pepper bolognese

Cozy, comforting and a perfect winter meal.

Ingredients

for the sauce

  • olive oil
  • 3 pieces shallots
  • 6 cloves garlic
  • 1 lb ground beef
  • 3/4 lb sweet Italian chicken sausage
  • dried oregano
  • dried basil
  • salt
  • pepper
  • 16 oz roasted red peppers
  • 6 oz tomato paste
  • 2 cups water
  • 2 sprigs thyme
  • 1/2 cup parmesan (freshly grated)

pasta and serving

  • 1 lb rigatoni
  • burrata cheese
  • basil

Directions

    In a food processor combine your tomato paste and roasted red peppers. Blend for about 30 seconds or until smooth. Set aside.

    In a large pot, heat olive oil over medium heat.

    Add garlic and shallot and sauté for about 5 minutes.

    Add ground beef, chicken sausage, oregano, basil, salt, and pepper.

    Cook until browned and finely broken up, about 10 minutes.

    Add your red pepper sauce, water, and thyme.

    Stir well, cover, and reduce heat to medium-low.

    Cook for 2-3 hours until it is to the consistency of your liking.

    Remove the thyme stems and stir in the Parmesan.

    Stir well and cook uncovered over medium heat for 20 more minutes while you cook your pasta.

    When your pasta is cooked, drain, and place right into the sauce.

    Mix very well until sauce starts to thicken.

    Divide pasta among bowls, top with burrata, basil, and pepper and enjoy :)
