Seared chicken thighs with couscous and a spicy charred scallion salsa
Ingredients
Salsa
- 3 limes lime juice (about 1/4 cup)
- 1 tsp brown sugar
- 1 jalapeño (thinly sliced, seeds half removed)
- 8 green onions (charred and finely chopped)
- 1 cups cilantro (ish, chopped)
- 1/2-1/4 tsp sesame oil
- 1/4 cup olive oil
- salt
Chicken and asparagus
- 1/2 lb chicken thighs (bone in & skin on)
- salt
- pepper
- avocado oil
- asparagus (large bunch, chopped in half)
Directions

Place lime juice, brown sugar, and jalapeño in a bowl.

Cut your green onions in half and char.

While charring, chop up your cilantro.

When onions are done, chop and place in lime juice mixture with cilantro, sesame oil, olive oil, and salt.

Set in fridge.

Preheat oven to 400.

Heat avocado oil in a large skillet over medium heat.

Add seasoned chicken thighs skin side down and sear for 5 minutes.

Flip and sear for another 5 minutes.

Remove chicken, turn off the heat, and add asparagus to the pan.

Mix in the left over juices from chicken.

Add salt and pepper and add chicken thighs back to the pan.

Place in oven for 15 more minutes to cook chicken through.

Serve chicken and asparagus over couscous and top with spicy charred scallion salsa and sesame seeds and enjoy
