Thai Chicken Curry Meatballs

One pan. So easy. Melt-in-your-mouth GOODNESS!!!

Ingredients

Meatballs

  • 1 lb ground chicken
  • 1/2 red bell pepper (finely diced)
  • 3 green onions (chopped)
  • 2 Tbsp cilantro (chopped)
  • 2 cloves garlic (mined)
  • 2 Tbsp soy sauce
  • 1/4 cup bread crumbs
  • 1 egg
  • olive oil (for cooking)
  • salt
  • pepper
  • red pepper flakes

Sauce / Bowl

  • yellow onion (very thinly sliced)
  • 1 1/2 red bell pepper (very thinly sliced)
  • 2 Tbsp red curry paste
  • 4 cloves garlic (minced)
  • 1 can coconut milk
  • 3 Tbsp soy sauce
  • jasmine rice

Toppings

  • cilantro
  • green onion
  • lime wedges

Directions

    Combine all of your meatball ingredients in a bowl and mix very well.

    Roll mixture into balls and set aside.

  3. 3

    Heat some olive oil in a large skillet over medium heat.

  4. 4

    Once warm, add your meatballs.

  5. 5

    Cook for 4–5 minutes all over, making sure each side is browning.

    Remove meatballs from pan and set aside.

    Add your onion and bell peppers and sauté for 5 minutes.

    Add your red curry paste and garlic and mix well.

    Add your coconut milk and soy sauce and bring to a simmer.

    Once simmering, add your meatballs back to the pan.

    Continue to simmer for 15–20 more minutes until your meatballs are cooked through.

    Once cooked, place the meatballs over a bed of jasmine rice and top with the onion, bell peppers, sauce, cilantro, green onions, and a squeeze of lime juice.
