Cajun chicken and rice bake
Cajun chicken and rice bake! Buttery, tangy, and spicy🤤 Also super easy one pan recipe for week nights!
Ingredients
One-pan Cajun chicken thighs with rice, peppers, and lemon, baked in the oven with a garlicky butter finish.
Directions

Preheat oven to 425.

Mix avocado oil, chicken thighs, and Cajun seasoning together in a oven safe skillet (I used a cast iron).

Set your skillet over medium-high heat.

Sear both sides of the thighs.

Once last side is almost seared, add 1 Tbs butter and lemon slices and cook for 1 more minute (move around the thighs so butter melts and lemons get charred).

Remove everything from skillet.

Add rice and cook until toasted.

Add onion and bell pepper and cook for another 3 minutes.

Add chicken broth, salt & pepper and bring to a boil.

Place chicken thighs and lemons back into skillet.

Cover and simmer for 10 minutes until most broth is gone, but not all.

Place in oven for 12-15 minutes or until chicken is cooked through.

While that is baking, melt together the last 5 Tbs of butter, garlic, and red pepper flakes.

Once melted, stir in parsley.

Take the chicken and rice bake out of the oven and put the garlic butter over the chicken and rice.
