Harvest bake with maple dijon vinaigrette.

Preheat oven to 400.

On a lined baking tray, add your sweet potato, red onion, and brussel sprouts.

Drizzle with olive oil, salt, pepper, and garlic powder and mix well.

Bake for 20 minutes.

Remove from oven and add sausage.

Mix well and bake for another 15 minutes.

While that is baking, mix up your dressing.

Remove the sausage bake from the oven.

Plate, drizzle over the maple Dijon vinaigrette, and top with some fresh parm and parsley!
