Chicken Tinga Tacos
Saucy, spicy, and SO good! The perfect quick and flavorful taco night.

Ingredients
Sauce
- extra virgin olive oil
- 1 sweet onion (chopped)
- 2 chipotle peppers in adobo sauce (chopped)
- 1 teaspoon oregano (dried)
- 1/2 teaspoon cumin (ground)
- 1 cup crushed fire-roasted tomatoes (canned)
- 1/4 cup chicken stock
- salt
- 3 cups shredded cooked chicken (rotisserie chicken works!)
Tacos
- 8 corn tortillas (6-inch)
- 2 avocados (mashed)
- cilantro (fresh cilantro, chopped)
- red onion (chopped)
- cotija cheese
- lime wedges
Directions

Heat EVOO in a large skillet over medium heat.

Once warm add the onion.

Sauté for a few minutes, until tender.

Add the chipotles, oregano, and cumin, cook for a minute.

Add in tomatoes, stock, and some salt.

Bring to a simmer, and cook for 7 minutes.

Place the mixture in a blender, and blend until smooth.

Return the sauce to the pan over low heat.

Add the chicken, and cook for a few minutes until fully combined and warm (i like to toast up my tortillas here).

To assemble, top the tortillas with the sliced avocado and top with chicken.

Garnish with red onion, cilantro, and cotija.
