Crispy beef cheesy tacos—these are so easy to whip up.

Ingredients
Tacos
- olive oil
- 1 onion (yellow)
- 1 lb ground beef
- 4 cloves garlic (minced)
- taco seasoning
- 1 Tbsp tomato paste
- 1 Tbsp chipotle paste
- 1/2 cup beef broth
- 10 pieces flour tortillas (small)
- shredded cheese (Mexican)
- cilantro
- lime slices
Chipotle cream sauce
- Greek yogurt (plain)
- 1 lime juice (juice from 1 lime)
- 1 Tbsp chipotle paste
Directions

Preheat oven to 400.

Heat olive oil in a large pan over medium heat.

Saute for a few minutes, until soft.

Add the ground beef and garlic, cook until the beef is brown all over.

Add in the taco seasoning, chipotle paste, tomato puree and mix well, let cook for a few minutes.

Add beef broth, mix well, then cover and simmer for 10 minutes or until there is no excess liquid.

Divide the beef and cheese between the mini flour tortillas, close and press them down firmly on a lined baking tray and bake for 15 minutes (if the are not staying closed, place another baking tray on top of the tacks while they are in the oven).

While the tacos are in the oven, mix together the chipotle cream sauce.

Once the tacos are crispy to your liking, remove from the oven.

Divide among plates and serve with your sauce, freshly chopped cilantro, and lime wedges.
