Dill pickle salt & vinegar chicken salad!
Dill pickle salt & vinegar chicken salad — perfect for weeknights and end-of-summer BBQs.
Ingredients
Chicken
- 1 1/2 lb chicken breast tenders
- 1/3 cup pickle juice
- salt
- pepper
- Few tbsp olive oil (@getgraza)
- dill (dried)
- parsley (dried)
- garlic powder
- onion powder
- vinegar
Salad
- arugula
- pickles
- cucumbers
- spicy salt and vinegar chips (@sietefoods)
Dressing
- 3/4 cup plain greek yogurt
- olive oil (drizzle @getgraza)
- 1 tbsp white vinegar
- dill (freshly chopped)
- basil (freshly chopped)
- pickles (chopped)
- water (depending on the consistency you like)
Directions

In a large bowl toss the chicken in vinegar, pickle juice, and salt.

Let marinade for 1-2 hours.

While that is marinating, make your dressing then set aside.

Once marinated drain some of the juice.

Add olive oil, pepper, parsley, dill, garlic powder, and onion powder and mix well until chicken is fully coated.

Grill your chicken until charred on the outside and cooked through.

While that is cooking, add the arugula, chopped pickles, and chopped cucumbers to a salad bowl.

Add about 1/2-3/4 of your dressing and mix until very well combined.

Place your salad in bowls and place chopped grilled chicken on top.

Sprinkle over your spicy salt and vinegar chips.

Drizzle some more dressing and olive oil on top and enjoy :)
