Greek chicken sausage in tomato sauce with basil, feta, and lemon
Greek chicken sausage in a saucy tomato sauce, with basil, feta, and lemon.
Ingredients
- olive oil
- 1 packet chicken sausage (TJ's)
- salt
- pepper
- 1 white onion (finely chopped)
- 5 cloves garlic (chopped)
- 2 tbsp tomato paste (double-concentrated)
- 2 lb cherry tomatoes
- 1/4 cup basil (chopped)
- 1 tbsp Dijon mustard
- 1/2 cup dry white wine
- 1 lemon juice (from 1 lemon)
- parsley (chopped)

Heat olive oil in a large ovenproof skillet over medium high heat.

Add sausage and brown all over.

Once browned to your liking, transfer to a plate.

Reduce heat to medium and add a little more olive oil.

Add onion and garlic, until translucent, about 5 minutes.

Add tomato paste and cook, stirring often, until darkened in color.

Add tomatoes, basil, Dijon mustard, and stir to combine.

Cover & cook, stirring occasionally, until tomatoes are beginning to fall apart and juices have thickened, 12–15 minutes.

Pour in wine and lemon juice and cook, stirring occasionally, until sauce is thickened, about 5 more minutes.

Season with salt and pepper.

Return the sausage to the pan and mix well.

Remove from heat and scatter feta on top.

Heat broiler and transfer skillet to oven; broil for about 5 minutes.

Plate on top of a bed of basmati rice and top with parsley and a squeeze of lemon and enjoy :)
