Kung Pao chicken with peppers and peanuts
Kung Pao chicken with peppers, peanuts, and a honey-soy-hoisin sauce.
Ingredients
Chicken
- 1 1/2 lb chicken breast (cubed)
King Pao sauce
- 1/2 cup water
- 1/3 cup soy sauce
- 1 Tbs sherry vinegar
- 2 Tbs honey
- 1 Tbs hoisin
- 2 Tbs balsamic vinegar
- 2 tsp red pepper flakes
- 1 tsp cornstarch
Other
- 3 Tbs avocado oil
- 2 red bell peppers (sliced)
- 4 cloves garlic
- 3 tsp ginger (grated)
- 2 tsp sesame oil
- green onion
- 3/4 cup peanuts
Directions

Combine chicken and all chicken marinade ingredients into a bowl, mix and set aside.

Combine all Kung Pao sauce ingredients, mix, and set aside.

Heat avocado oil in a large pan over medium heat.

Add chicken and cook for about 5 minutes/until it starts to crisp up.

Add bell peppers, garlic, ginger, and half amount of green onions.

Cook for another 5 minutes.

Once bell peppers are wilted, add the Kung Pao sauce.

Cook for about 8 minutes.

Once the sauce starts to thicken, add sesame oil and peanuts, cook for another 2-3 minutes until sauce is thick and coats the chicken.

Serve with jasmine rice and roasted broccoli.
