Pork Orecchiette with Onion, Garlic, and Italian Seasonings

Ok i have a new favorite pasta dish!

Ingredients

  • olive oil (for sautéing)
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1 pound ground pork
  • 1/2 Tbsp Italian seasoning
  • 1/2 Tbsp dried basil
  • 1/2 tsp cayenne
  • 1 tsp fennel seed
  • 1 teaspoon paprika
  • 1/2 pound orecchiette pasta
  • 32 oz chicken broth
  • 2 cups spinach
  • parsley (finely chopped)
  • Parmesan (freshly grated)

Directions

    In a large pot over medium heat add olive oil, onion and garlic, cook until golden and fragrant.

    Add ground pork and start to brown.

    Once browned, add Italian seasoning, dried basil, cayenne, fennel seed, and paprika.

    Mix and let ground pork cook a little more with spices.

    Add orecchiette and half of the chicken broth.

  6. 6

    Stir and bring to a boil.

    Keep adding the other half of chicken broth as it cooks down.

    Once the orecchiette is cooked add spinach and parsley and mix until spinach is wilted.

    Top with Parmesan & enjoy!

Notes

I did not cook until all of the liquid was gone, that’s what gives it that gravy/saucey consistency.
